Does protein powder expire? Yes, in the sense that it goes stale, but the studies show quality fails before safety. A USDA study of sealed whey concentrate found microbe counts stayed low in every sample while the powder yellowed and caked. The authors put shelf life at 9 months at 35 °C and at least 18 months at lower temperatures.
This is an evergreen explainer, not news. On 19 October 2026 this desk read three PubMed abstracts: the USDA Agricultural Research Service study in the Journal of Dairy Science (2016), a North Carolina State University study in the Journal of Food Science (2009) and an Oregon State University browning study (2005). It also read the FDA’s compliance guide to the dietary-supplement manufacturing rule. Every figure below comes from those abstracts, not the full papers.
How long does protein powder last? Three whey studies side by side
| Study | What was stored | Conditions | What failed first | Shelf-life finding |
|---|---|---|---|---|
| USDA-ARS, J Dairy Sci 2016 | Two whey concentrate batches, WPC34 (34.9 g protein/100 g) and WPC80 (76.8 g), in sealed bags | Up to 18 months, ambient and at elevated temperature and humidity | Yellowing, lysine loss, rising water activity, caking; 35 °C samples pulled by 12 months for appearance | 9 months at 35 °C; at least 18 months cooler |
| NC State, J Food Sci 2009 | Commercial WPC80 and isolate, agglomerated and not, from 4 facilities | 21 °C, 50% relative humidity, 18 months | Oxidation flavours: cardboard, raisin/brothy, cucumber, fatty | 12-15 months non-agglomerated; 8-12 months agglomerated |
| Oregon State, J Dairy Sci 2005 | Three commercial sweet whey powders, not protein supplements | Accelerated testing, plus 21 °C at 35% RH | Browning; free moisture and acidity rose | No significant sensory change; browning 1.77-4.14 times faster per 10 °C |
Why does protein powder expire?
Two chemistries, and heat speeds both. The first is Maillard browning, the reaction behind the yellow cast. Many 2016 samples lost lysine, an essential amino acid, and yellowed. The 2005 study used sweet whey rather than a supplement, so read it as chemistry only: its Q10 figures mean every 10 °C rise multiplied the browning rate by 1.77 to 4.14.
The second is fat oxidation, and here the type of powder matters. Agglomeration is a processing step applied to some whey powders. In the NC State work, agglomerated powders developed cardboard and fatty off-flavours faster, and agglomeration with or without lecithin cut storage stability. Consumer scores dropped for agglomerated WPC80 stored 12 months and for isolate of either type stored 18 months. For how whey powder is made, see how protein powder is made.
Is expired protein powder safe?
On the best evidence here, a dry, sealed powder fails on taste long before microbes. In the USDA study, aerobic bacteria, coliforms, yeast and mould stayed below 3.85 log10 cfu/g in all samples, and humidity was not a factor in most of them.
Know the limits. The authors call it a case study: two batches in sealed bags. An opened tub that meets a wet scoop is a different object.
What does the best-by date on a tub mean?
The FDA’s small entity compliance guide says the dietary-supplement CGMP rule (21 CFR 111) does not require an expiration, shelf or best-if-used-by date. If a firm prints one anyway, it should have data to support it. That covers powders sold as supplements; whey sold as an ordinary food sits under food labelling rules this desk did not read for this post.
So a best-by is the maker’s own quality call. The batch or lot number, which USADA says is sometimes printed with the expiration date, is the number you use to check an Informed Sport batch.
How should you store protein powder?
Keep it cool: at 35 °C the 2016 shelf life fell to 9 months, against at least 18 cooler. Keep it sealed and use a dry scoop. Expect an agglomerated powder to go stale sooner (8 to 12 months against 12 to 15 at 21 °C).
FAQ
Can expired protein powder make you sick?
The best data say a dry, sealed powder is unlikely to be the problem. In the USDA study, bacteria, coliforms, yeast and mould stayed under 3.85 log10 cfu/g in every sample for up to 18 months. That covers two sealed batches, not a tub that got damp. If yours smells sour, shows mould or has wet clumps, bin it whatever the date says.
What happens to protein powder after it expires?
It goes stale before it goes unsafe. The three studies recorded yellowing and browning, lysine loss, rising water activity, caking, and cardboard, fatty or brothy off-flavours. How fast depends on heat: the Oregon State browning rate rose 1.77 to 4.14 times per 10 °C. The date is the maker’s quality estimate, not a cliff edge.
How to tell when protein powder goes bad?
Use the markers the studies used. Look for a yellow or brown cast and hard clumps that will not break up. Smell and taste for stale cardboard, fatty or rancid notes, the oxidation flavours the NC State panel tracked. Any visible mould, wet patches or a sour smell means it goes in the bin, not the shaker.
None of this is medical advice or a ruling on a specific tub. The abstracts describe whey in a lab, not your cupboard. If a scoop smells wrong, the date on the lid does not overrule your nose.
